How do I reprogram the names that go with the exte...

How do I reprogram the names that go with the extension #s? I have been working here for almost a year & my phone screen still displays the name of some past paralegal I've never even met! My boss would also like me to find out how to change messages and check the caller ID log. The manual is really not much help.
